docs: rename to SimpleShop in docs, plan full rename for later

- Update README title to "SimpleShop"
- Update ROADMAP title to "SimpleShop Roadmap"
- Add "Rename Project to SimpleShop" to Technical Debt section
  with list of files that would need updating
